Critical violations: 1 Observed cold holding above 41° F at time of inspection – prep line cooler at 60° F  and 4 door cooler at 67° F – remove all product/do not use until cold holding is maintained at 41° F or lower – must monitor all cold holding every 4 hours to ensure proper cold holding.

Non-critical violations: 4 Observed improper thawing of shrimp in standing water – must thaw in cool, running water or refrigeration –corrected on-site; observed food boxes stored on floor in walk-in freezer *Final Notice*; observed pre employee without proper hair restraint – hat, hairnet for visor required; observed floors and walls in dish area and vent hoods/equipment in fryer/grill area in need of clenaing.

Will re-inspect in 2 weeks (June).

Critical violations: 0 Previous critical violations corrected – continue daily/hourly temperature checks and logs to ensure proper cold holding temperatures.

Non-critical violations: 3 Observed food prep employees without proper hair restraint while cooking/preparing food – hat, hairnet or visor required; observed flooring at ice machine damaged, in need of repair; observed lid on breading container broken, in need of replacement.

Will re-inspect in 3 months (Sept.).

Critical violations: 1 Observed improper hand washing practices of prep employee following coughing/sneezing – ensure hands are washed and fresh gloves are put on following cough/sneeze.

Non-critical violations: 5 Observed food boxes stored on floor in walk-in freezer; observed employee with drink in prep area without lid and straw; observed leak at prep sink in need of repair; observed no paper towels at prep area hand sink in back; observed cleaning needed at soda syrup storage flooring. Must correct by 10-28-18.
